Final Produce Box, thanks to Archer!


Hey Friends! We hope everyone is enjoying the cooler temps and refreshing rain! Derek has been bundling up to work in the garden and I have finally been to walk outside without sweating. ๐Ÿ˜‚


I wanted to write one more blog post to say THANK YOU to our crop share members during our FIRST year! We are so thankful for you all and loved hearing about how much you enjoyed the produce boxes each week. ๐Ÿ˜Š


We are currently forming a wait list for next year's produce boxes! If you would like to be added to the wait list, let us know. : ) Early next year, I will send out an email with the details and price of the weekly produce boxes.


Also, thank you for understanding as we make this our final week. Baby Archer is doing great, but he is so excited to join our crazy life that we had an episode of preterm labor on 9-18. It was quite the day! Katie drove herself to the hospital in the middle of her work day, having no idea she was experiencing preterm labor. The labor was able to be stopped, but rest was ordered. Thanks to Derek, family, and friends the garden will be able to continue through this weekend! ๐Ÿ™Œ๐Ÿผ


This weekend, we will be LOADING up your produce boxes with kale, asian greens, tomatoes, red/green bell peppers, beets, turnips, radishes, jalapeรฑos, onions, herbs, collards, and any remaining green beans/eggplants. After this weekend, Derek will focus on getting the garden ready for winter, so we will be ready for Archer's arrival. โค๏ธ

Weekly Recipe:

Roasted Veggies with Chimichurri Sauce:

Final Weekly Recipe is full of roasted root veggies and chimichurri sauce! 95% of the ingredients will be in your boxes! We have been eating on this all week, and it's truly delicious. ๐Ÿ˜‹


Roasted Root Veggies:

Chop the following into bite size pieces:

Beets

Turnips

Onions

Radishes

Kale

Onions

Green Beans

Eggplants

Potatoes (not in your boxes)

Toss the above in olive oil, salt, and pepper.

Roast for 40 minutes at 425 degrees, flipping the veggies twice during the 40 minutes.

We substituted the red wine vinegar for balsamic fig vinegar, but that is just personal preference. ๐Ÿ˜ƒ All the herbs needed for the sauce, will be in your boxes!
