Hey Friends! The end of July signals pesto making time at Lazy Creek Farm!😍
From the garden...
We harvest the basil, wash, and dry it....
We actually do not use pine nuts in our basil due to a nut allergy in our household. My secret ingredients? Extra Virgin Olive Oil, Fig Balsamic Vinegar, and Italian seasoning! Not pictured is an acid that is always needed in pesto. I will use apple cider vinegar or lemon juice from fresh lemons. There is no right or wrong, just add a little of each to taste! Add the basil with the ingredients below and blend!
Pesto is a FAVORITE in our house. I have frozen over 200 ounces of pesto for us to use all winter long! Pesto freezes super well, be sure the basil is completely dry before you start blending it. Sterilize the canning jars like usual when canning and simply fill your jars with the delicious pesto, secure with the lid/ring, and freeze. It's really easy to do and yummy!
